Glycaemic index and glycaemic load

Carbohydrate intake is followed by elevation in the blood glucose concentration. The glycaemic index (GI) indicates the rate of carbohydrate absorption, whereas the glycaemic load (GL) also includes the content of carbohydrate in the meal. Different factors affecting the level of GI and GL in the diet are analyzed. A diet having a high GI/GL ratio increases blood glucose concentration and in consequence insulin secretion. A diet having a high GI/GL ratio may contribute to development of insulin resistance. There is a multitude of data indicating that regulation of the GI/GL ratio in the diet plays an important role in both prevention and treatment of diabetes. The involvement of a high GI/GL ratio in the development of other diseases, including cancer, is also discussed.
